The menu has a firm focus on local produce – and spectacular food. It’s at the fine-dining end of the spectrum, but with sensible portion sizes. A lot of the produce comes from their own garden or from top-quality local suppliers. There’s a strong emphasis on sustainable fish and seafood plus local game when it’s in season. Meats are aged, cured and smoked in their own butchery.
